Bacon Wrapped Jalapeno Popper Chicken – Keto
Ingredients
- 4 chicken breast
- 20 slices bacon
GLAZE
- ¼ cup canola oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp onion powder
- ¼ tsp cayenne pepper
- ¼ tsp pepper
- ¼ tsp salt
CHEESE STUFFING
- 220 g cream cheese
- 1 cup cheddar cheese grated
- 1 jalapeno seeded and finely diced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
GARNISH
- 1 tbsp fresh parsley chopped
Instructions
- Preheat the oven to 190 °C
- In a small bowl, mix together all the GLAZE ingredients.1 tsp garlic powder, 1 tsp paprika, ½ tsp onion powder, ¼ tsp cayenne pepper, ¼ tsp pepper, ¼ tsp salt, ¼ cup canola oil
- In a medium bowl, mix together all the CHEESE STUFFING ingredients.1 cup cheddar cheese, 1 jalapeno, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried parsley, 220 g cream cheese
- Lengthwise, cut a pocket into each chicken breast. Stuff with the cheese mixture, dividing equally.4 chicken breast
- Wrap each chicken breast in 4-5 slices of bacon. Place the chicken breasts, seam side down in a lightly greased baking pan.20 slices bacon
- Top with the glaze mixture.
- Bake for 25-30 minutes or until bacon is crispy and chicken is cooked through, basting the chicken occasionally with the pan drippings.
- If you prefer extra crispy bacon, grill for an additional 1-2 minutes.
- Sprinkle with parsley, then serve.1 tbsp fresh parsley
