Crazy Lamb Salad

This salad is CRAZY good. I mean, the lamb is cooked to perfection, and the dressing is this amazing combination of flavours. The greens are super fresh, and the whole thing comes together to create an unforgettable flavor experience.

Ingredients
  

LAMB

  • 1 tbsp olive oil
  • kg leg of lamb bone removed, leg butterflied
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp ground cumin
  • ¼ tsp dried thyme
  • 2 cloves garlic peeled and crushed

SALAD

  • 110 g feta crumbled
  • ½ cup pecans
  • 2 cups spinach
  • tbsp lemon juice
  • ¼ cup olive oil
  • 1 cup fresh mint chopped

Instructions
 

  • Rub lamb with salt and pepper, oil, thyme, cumin, garlic
    1 tbsp olive oil, 1½ kg leg of lamb, ½ tsp salt, ½ tsp pepper, 1 tsp ground cumin, ¼ tsp dried thyme, 2 cloves garlic
  • Pre-heat your grill to medium-high and transfer lamb
  • Cook for 40 minutes, making sure to flip it once
  • Take a lined baking sheet and spread pecans
    ½ cup pecans
  • Toast in oven for 10 minutes at 180C
  • Transfer grilled lamb to cutting board and let it cool
  • Slice lamb
  • Take a salad bowl and add spinach, mint, feta cheese, olive oil, lemon juice, toasted pecans, salt, pepper and toss well
    110 g feta, 2 cups spinach, ¼ cup olive oil, 1 cup fresh mint, 1½ tbsp lemon juice
  • Add lamb slices on top
  • Serve and enjoy!
