Healthy Slow-Cooker Lamb Leg

Ingredients
- 900 g leg of lamb
- ½ tsp salt
- ½ tsp pepper
- 1 tbsp pure vanilla extract
- 2 tbsp mustard
- ¼ cup olive oil
- 4 sprigs fresh thyme
- 6 leaves fresh mint
- 1 tsp garlic crushed
- ¼ tsp dried rosemary
Instructions
- Add oil to your Slow Cooker¼ cup olive oil
- Add lamb, salt, pepper, vanilla bean extract, mustard, rosemary, garlic to your Slow Cooker and rub the mixture well900 g leg of lamb, 1/2 tsp salt, 1/2 tsp pepper, 1 tbsp pure vanilla extract, 2 tbsp mustard, 1/4 tsp dried rosemary, 1 tsp garlic
- Place lid and cook on LOW for 7 hours
- Add mint and thyme4 sprigs fresh thyme, 6 leaves fresh mint
- Cook for 1 hour more
- Let it cool and slice
- Serve with pan juices
- Enjoy!
