Tangy Bacon Egg Salad
Ingredients
- 5 eggs hard boiled
- ¼ cup mayonnaise
- 3 slices bacon
- 2 tablespoons bacon fat
- ¼ red onion
- 2 teaspoons Dijon mustard
- ¼ teaspoon cayenne pepper
- ¼ teaspoon pepper
Instructions
- Slice up your bacon into thin slices and add them to a pan. Let the bacon cook on medium heat until crispy.3 slices bacon
- While the bacon is cooking, slice up your red onion.¼ red onion
- Take out your bacon, keeping as much of the drippings in the pan as possible. Rest your bacon on paper towels to cool off and get extra crispy.
- Add your bacon drippings, ¼ cup mayo, 2tbsp Dijon mustard, and chopped red onion to your hard boiled eggs.¼ cup mayonnaise, 2 tablespoons bacon fat, 2 teaspoons Dijon mustard, 5 eggs
- Mix well, smashing until the desired consistency is reached.
- Add cayenne pepper and pepper and mix well.¼ teaspoon cayenne pepper, ¼ teaspoon pepper
- Finally, add your bacon to the mix and fold it in gently to leave it chunky and crispy.
- Serve and enjoy!
