Equipment

  • 1 slow cooker

Ingredients
  

  • 700 g boneless skinless chicken thighs
  • 3 cups chicken stock
  • 350 g cauliflower florets
  • ¼ cup coconut oil or bacon grease
  • ¼ cup brown onion chopped
  • 1 jalapeno pepper chopped (leave seeds in for extra heat)
  • 2 cloves garlic crushed
  • 2 tsp ground cumin
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp coriander

Instructions
 

  • Place all of the ingredients except the coriander in a large slow cooker. Cook on high for 4 hours, or low for 8 hours.
    700 g boneless skinless chicken thighs, 3 cups chicken stock, 350 g cauliflower, 1/4 cup coconut oil, 1/4 cup brown onion, 1 jalapeno pepper, 2 cloves garlic, 2 tsp ground cumin, 1 tsp salt, 1/2 tsp pepper
  • Remove the chicken to a plate and shred with two forks. Use an immersion blender to blend the soup until it is mostly creamy. Return the chicken to the pot and mix well.
  • Sprinkle with chopped coriander when serving.
    1 tbsp coriander

Notes

Instant Pot Directions: Cook on the Soup/Stew function for 35 minutes. Allow the pressure to release naturally before removing the lid.
