Mouth Watering Grilled Bruschetta Chicken
Ingredients

- 4 chicken breasts
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- 55 g mozzarella grated
Bruschetta
- 1 ½ cups cherry tomatoes diced
- ½ cup sun-dried tomatoes chopped
- ¼ cup fresh basil chopped
- 2 cloves garlic crushed
- 1 tbsp balsamic vinegar
- 1 ½ tbsp olive oil
- â…› tsp salt
- â…› tsp pepper
Instructions
- In a small bowl, combine all the ingredients for the bruschetta topping and stir until combined. Set aside.1 1/2 cups cherry tomatoes, 1/2 cup sun-dried tomatoes, 2 cloves garlic, 1 tbsp balsamic vinegar, 1 1/2 tbsp olive oil, 1/8 tsp salt, 1/8 tsp pepper, 1/4 cup fresh basil

- Preheat the grill to medium-high heat with the lid closed. Add the chicken breasts and cook for 7-10 minutes per side, or until cooked through.
- When the chicken is almost fully cooked, top with the mozzarella. Cook for another 1-2 minutes, until melted.55 g mozzarella
- Top the chicken breasts with the bruschetta topping and serve.
