Perfect Filet Mignon
Ingredients
Herb Butter
- 2 tbsp butter softened, divided
- ½ tbsp fresh rosemary
- ½ tbsp fresh thyme
- 1 cloves garlic crushed
Steak
- 4 filet mignon steaks at room temperature
- ½ tsp salt
- ½ tsp pepper
Instructions
- Remove your filet mignon from the fridge about 30 minutes before cooking to bring it to room temperature.4 filet mignon steaks
- Prep the herb butter by mixing all the ingredients together into a log and put to the side.2 tbsp butter, 1/2 tbsp fresh rosemary, 1/2 tbsp fresh thyme, 1 cloves garlic
- Trim any connective tissue around the edges of the steaks.
- Season the filets liberally with salt and pepper on both sides.1/2 tsp salt, 1/2 tsp pepper
- Heat the cast iron pan over medium-high heat, until the pan is very hot.
- Add the filets. Sear for 2 minutes on each side, without moving them around. For a 5cm thick steak, that is 5 minutes for rare, 6 minutes for medium rare, 7 minutes for medium, or 8 minutes for medium well. Use a meat thermometer to check for the right temperature : 52C for rare, 54C for medium rare, 60C for medium, and 68C for medium well. The temperature will rise slightly while resting.
- Remove the filets from the pan and transfer to a plate. Top each with herb butter (slice the log of herb butter into four parts and put one on each steak
