Minced Beef Zucchini Stir Fry with Pesto
Ingredients
- 450 g Minced beef
- 1 tsp Salt
- ½ tsp Pepper
- 2 Zucchini sliced into half moons
- 2 cloves Garlic crushed
- ¾ cup Pesto or more to taste
- ½ cup Goat cheese crumbled
- 2 tbsp Fresh parsley chopped
Instructions
- In a large pan over medium heat, cook garlic for about one minute, until fragrant.2 cloves Garlic
- Add minced beef. Sprinkle with salt and pepper to taste. Increase heat to medium high. Cook for 7-10 minutes, breaking part with a spoon or spatula, until browned.450 g Minced beef, 1 tsp Salt, 1/2 tsp Pepper
- Add zucchini. Cook, stirring occasionally, for 5-7 minutes, until zucchini is starting to soften (but not soggy) and golden.2 Zucchini
