Easy One Pan Kumara Dish
Ingredients
- 1 tbsp coconut oil
- 220 g kumara cubed
- 1 brown onion chopped
- 1 cloves garlic crushed
- 1 yellow capsicum sliced
- 200 g black beans drained & rinsed
- 90 g corn frozen or canned
- 200 g diced tomatoes undrained
- 1 tbsp ground cumin divided
- ½ tbsp taco seasoning
- ¾ tsp salt divided
- ½ lime juice
- ¾ cup mozzarella grated
- ½ avocado diced
- 1 spring onion chopped
- ¼ cup coriander chopped
- 2 tbsp Greek yogurt
- 1 tbsp fresh parsley chopped
Instructions
- Preheat a large deep pan over medium heat, swirling the oil to coat.1 tbsp coconut oil
- Add kumara, 1/2 of the cumin and 1/2 of the salt. Cook for 5 minutes, stirring occasionally.220 g kumara, 1 tbsp ground cumin, 3/4 tsp salt
- Add onion, garlic, and capsicum. Cook for a further 3 minutes.1 brown onion, 1 cloves garlic, 1 yellow capsicum
- Stir in the black beans, corn, diced tomatoes, remaining cumin, remaining salt, taco seasoning, and pepper.200 g black beans, 90 g corn, 200 g diced tomatoes, 1 tbsp ground cumin, 3/4 tsp salt, 1/2 tbsp taco seasoning
- Bring to a boil, then reduce to a low heat, cover, and cook for 15 minutes, or until the kumara are tender.
- Turn off the heat. Stir in the avocado, spring onion, coriander, and lime juice. Sprinkle with cheese, cover, and set aside until melted.1/2 lime juice, ½ avocado, 1 spring onion, ¼ cup coriander, ¾ cup mozzarella
- Serve with Greek yoghurt and top with parsley.2 tbsp Greek yogurt
