Chicken Burrito Bowl – Clean Eating
Ingredients
Chicken
- 1 tbsp olive oil
- ½ cup red capsicum chopped
- ½ cup brown onion chopped
- 2 chicken breast chopped
- 1 tbsp taco seasoning
Rice
- 425 g black beans rinsed and drained
- 425 g canned corn drained
- 411 g diced tomatoes
- 113 g green chiles diced
- 1 cup jasmine rice
- 1 tbsp taco seasoning
- ½ tsp chili powder
- 2 cups chicken stock
Toppings
- â…“ cup salsa
- 1 cup tasty cheese grated
- ½ tsp salt
- ½ tsp pepper
Instructions
- Heat the olive oil in a large saucepan over medium heat. Sauté the onions and capsicum. Set aside.1 tbsp olive oil, 1/2 cup red capsicum, 1/2 cup brown onion
- Add the chopped chicken to the pan along with the taco seasoning and cook until browned.2 chicken breast, 1 tbsp taco seasoning
- Combine black beans, corn, tomatoes, green chiles, jasmine rice, taco seasoning, and chili powder in a large pot.1/3 cup salsa, 425 g black beans, 425 g canned corn, 411 g diced tomatoes, 113 g green chiles, 1 cup jasmine rice, 1 tbsp taco seasoning, 1/2 tsp chili powder
- Bring to a light boil with the chicken stock. Reduce the heat to low and cover the pan.2 cups chicken stock
- Cook for another 15-20 minutes, or until the rice is completely cooked.
- When the rice is finished, season with salt and pepper to taste. Top rice mix with chicken, vegetables, salsa ingredients then add your favourite toppings and cheese.1 cup tasty cheese, 1/2 tsp salt, 1/2 tsp pepper
Notes
You can also top nachos with this mixture or wrap it in a tortilla to make burritos.
