Cherry Oat Bars – Clean Eating

Ingredients
  

  • ½ cup oats
  • ½ cup quinoa
  • 2 tbsp chia seeds
  • 2 tbsp sliced almonds
  • 2 tbsp dried cherries
  • 2 tbsp dark chocolate chopped
  • ¼ cup almond butter
  • 1 tbsp honey
  • 1 tbsp coconut oil
  • 2 tbsp pureed prunes
  • ½ tsp salt

Instructions
 

  • Line a large baking sheet with baking paper.
  • Combine oats, quinoa, chia seeds, almonds, cherries, and chocolate in a large mixing bowl.
    ½ cup oats, ½ cup quinoa, 2 tbsp chia seeds, 2 tbsp sliced almonds, 2 tbsp dried cherries, 2 tbsp dark chocolate
  • Warm almond butter, honey, coconut oil, and salt in a small saucepan over low heat until melted and smooth, stirring occasionally.
    ¼ cup almond butter, 1 tbsp honey, 1 tbsp coconut oil, 1/2 tsp salt
  • Mix in the prune puree.
    2 tbsp pureed prunes
  • Stir the almond butter mixture into the oat mixture.
  • Form into bars with your hands, using about 1/3 cup of the mixture for each; place on prepared sheet and refrigerate until set, about 1 hour.

Notes

Refrigerate in an airtight container for up to 3 weeks.
