Ingredients
  

  • ½ cup rice
  • 300 g mince beef
  • 1 brown onion diced
  • 1- inch fresh ginger crushed
  • 4 garlic cloves crushed
  • 1 tbsp olive oil
  • 1 red capsicum diced
  • 2 zucchinis diced
  • 1 eggplant diced
  • 1 tomato diced
  • 4 soy sauce
  • 1 tbsp rice vinegar
  • 3 tbsp honey
  • ¼ tsp pepper
  • ¼ tsp salt
  • ¼ tsp chili flakes
  • 4 sprigs spring onion finely sliced

Instructions
 

  • Cook rice according to package directions.

  • Preheat a wok or large deep non-stick pan over medium heat while the rice is cooking.
  • Cook, breaking up the mince beef and stirring constantly, for about 5-7 minutes.

  • If desired, drain the fat.
  • Add onion, ginger, and garlic near the end of browning ground beef.

  • Cook, stirring occasionally, for 2-3 minutes.
  • Place the beef on a plate and return the pan to the stove.
  • Swirl in the oil to coat, then add the capsicum and cook for 3 minutes, stirring occasionally.

  • Add the zucchini, eggplant, and tomato.
    2 zucchinis, 1 eggplant, 1 tomato
  • Cook for another 5 minutes, stirring occasionally
  • Combine the soy sauce, rice vinegar, honey, pepper, and chili flakes in a mixing bowl and add to the pan.
    4 soy sauce, 1 tbsp rice vinegar, 3 tbsp honey, 1/4 tsp pepper, 1/4 tsp salt, 1/4 tsp chili flakes
  • Cook for 1 minute, stirring constantly.
  • Stir in the cooked beef.
  • Remove from the heat and stir in the spring onion.

  • Fluff the rice with a fork, then top with the mince beef and serve
