Asian Mince Beef and Rice Bowls [Clean Eating]
Ingredients
- ½ cup rice
- 300 g mince beef
- 1 brown onion diced
- 1- inch fresh ginger crushed
- 4 garlic cloves crushed
- 1 tbsp olive oil
- 1 red capsicum diced
- 2 zucchinis diced
- 1 eggplant diced
- 1 tomato diced
- 4 soy sauce
- 1 tbsp rice vinegar
- 3 tbsp honey
- ¼ tsp pepper
- ¼ tsp salt
- ¼ tsp chili flakes
- 4 sprigs spring onion finely sliced
Instructions
- Cook rice according to package directions.1/2 cup rice
- Preheat a wok or large deep non-stick pan over medium heat while the rice is cooking.
- Cook, breaking up the mince beef and stirring constantly, for about 5-7 minutes.300 g mince beef
- If desired, drain the fat.
- Add onion, ginger, and garlic near the end of browning ground beef.1 brown onion, 1- inch fresh ginger, 4 garlic cloves
- Cook, stirring occasionally, for 2-3 minutes.
- Place the beef on a plate and return the pan to the stove.
- Swirl in the oil to coat, then add the capsicum and cook for 3 minutes, stirring occasionally.1 tbsp olive oil, 1 red capsicum
- Add the zucchini, eggplant, and tomato.2 zucchinis, 1 eggplant, 1 tomato
- Cook for another 5 minutes, stirring occasionally
- Combine the soy sauce, rice vinegar, honey, pepper, and chili flakes in a mixing bowl and add to the pan.4 soy sauce, 1 tbsp rice vinegar, 3 tbsp honey, 1/4 tsp pepper, 1/4 tsp salt, 1/4 tsp chili flakes
- Cook for 1 minute, stirring constantly.
- Stir in the cooked beef.
- Remove from the heat and stir in the spring onion.4 sprigs spring onion
- Fluff the rice with a fork, then top with the mince beef and serve
