Ingredients
  

  • 2 tbsp Olive oil divided
  • 3 cloves Garlic crushed
  • ½ Brown onion diced
  • 450 g Chicken breast cut into bite size pieces
  • 5 cups green cabbage grated
  • ½ Red capsicum chopped
  • ¼ cup Coconut aminos or sub soy sauce
  • ½ tsp Ground ginger
  • ½ tsp Salt
  • ½ tsp Pepper
  • 2 tbsp chives chopped

Instructions
 

  • Heat half of the olive oil in a large pan or wok, over medium heat. Add the garlic and cook for 30 seconds, until fragrant. Add onion. Cook for 5-7 minutes, until translucent.
    2 tbsp Olive oil, 3 cloves Garlic, 1/2 Brown onion
  • Increase heat to medium-high. Add the remaining olive oil and the chicken. Stir fry for 3-5 minutes, until the chicken is just golden. (Don't overcook to avoid drying it out. You want it to be about 80%-90% done.)
    2 tbsp Olive oil, 450 g Chicken breast
  • Add the cabbage, capsicum, and coconut aminos. Season with ground ginger, salt, and pepper. Stir fry for 3-5 minutes, until the cabbage is tender. Garnish with chives.
    5 cups green cabbage, 1/2 Red capsicum, 1/4 cup Coconut aminos, 1/2 tsp Ground ginger, 1/2 tsp Salt, 1/2 tsp Pepper, 2 tbsp chives
