Avocado Egg Salad Recipe
Ingredients
- 2 Avocados
- 3 tbsp Lime juice
- ¾ tsp Salt to taste
- ¼ cup coriander
- 3 tbsp Red onion chopped
- 3 tbsp Celery finely chopped
- 1 tbsp Jalapenos sliced; or more to taste
- 8 Eggs hard boiled and diced
Instructions
- To hard boil eggs, place them in a pan of cool water covered by 2.5cm of water. Cover with a lid, bring to a boil and reduce heat to medium-high.Set timer for 6-7 minutes.Once cooked, transfer to a bowl of iced water for a few minutes. This will stop the cooking and make them easy to peal. Remove from water and peel and dice immediately.8 Eggs
- Mash the avocado and lime juice together with salt, leaving some chunks.2 Avocados, 3 tbsp Lime juice, 3/4 tsp Salt
- Fold in the coriander, red onion, celery, and jalapenos, until just combined.1/4 cup coriander, 3 tbsp Red onion, 3 tbsp Celery, 1 tbsp Jalapenos
- Gently, fold in the hard boiled eggs, mashing the yolks a little. Adjust salt and jalapenos to taste if needed.
