Ingredients
  

SAUCE

  • ¼ cup soy sauce
  • 1 ½ cups beef stock or water
  • 2 tbsp honey
  • 3 tbsp cornstarch
  • 5 cloves garlic crushed
  • 2 tbsp ginger crushed

BEEF STIR FRY

  • 400 g beef sirloin or ribeye thinly sliced
  • 1 brown onion thinly sliced
  • 1 red capsicum thinly sliced
  • 1 yellow capsicum thinly sliced
  • 170 g mushrooms sliced
  • 450 g broccoli chopped
  • 2 tbsp vegetable oil divided

GARNISH

  • 1 tbsp sesame seeds

Instructions
 

  • Prepare the vegetables and beef.
  • Whisk together soy sauce, beef stock, honey, cornstarch, garlic, and ginger in a small bowl. Place aside.

  • Preheat a large ceramic non-stick pan over medium heat with 1/2 the oil.
    2 tbsp vegetable oil
  • Cook beef, uncovered, for 3-4 minutes per side, or until browned, then transfer to a bowl.
    400 g beef sirloin
  • Repeat with the remaining beef.
  • Place aside.
  • Return the pan to high heat and add the mushrooms. Cook for 3 minutes, or until golden brown, then transfer to a plate. Place aside.
    170 g mushrooms
  • Return the pan to high heat and add the remaining oil, capsicum, and onions.
    1 brown onion, 1 red capsicum, 2 tbsp vegetable oil, 1 yellow capsicum
  • Cook for another 2-3 minutes, stirring once or twice, before transferring to a plate. Place aside.
  • Return pan to medium heat, add broccoli, and whisk stir fry sauce well (cornstarch settles quickly at the bottom).
    450 g broccoli
  • Allow sauce to come to a boil, then cook for a few minutes, stirring frequently, until thickened.
  • Cooked beef, mushrooms, onion, and capsicums should all be returned to the pan.
  • Turn off the heat and sprinkle sesame seeds on top of the beef stir fry.
    1 tbsp sesame seeds
  • Serve hot with quinoa, brown rice vermicelli, or whole wheat spaghetti.
