


Beef Zucchini Chips
Ingredients
- 2 cloves garlic peeled and minced
- 1 tsp ground cumin
- 1 tbsp coconut oil
- 450 g minced beef
- ½ cup onion chopped
- 1 tsp paprika
- ¼ tsp salt
- ¼ tsp pepper
- 3 zucchini sliced lengthwise, insides scooped out
- ¼ cup coriander chopped
- ½ cup tasty cheese shredded
- 1½ cups enchilada sauce clean eating friendly
- ½ avocado chopped
- 2 tbsp spring onions chopped
- 2 tomatoes cored and chopped
Instructions
- Take a pan and place it over medium-high heat
- Add oil and heat it up1 tbsp coconut oil
- Add onions and stir cook for 2 minutes½ cup onion
- Add beef and stir for a few minutes450 g minced beef
- Add paprika, salt, pepper, cumin, garlic and stir cook for 2 minutes1 tsp ground cumin, 1 tsp paprika, ¼ tsp salt, ¼ tsp pepper, 2 cloves garlic
- Transfer zucchini halves to baking pan3 zucchini
- Stuff each with beef mix, pour enchilada sauce on top1½ cups enchilada sauce
- Sprinkle cheese½ cup tasty cheese
- Bake (covered) for 20 minutes at 180C
- Uncover and sprinkle coriander¼ cup coriander
- Bake for 5 minutes more
- Sprinkle avocado, spring onions, tomatoes on top1/2 avocado, 2 tbsp spring onions, 2 tomatoes
- Serve and enjoy!
