Ingredients
  

CHICKEN

  • 4 chicken breasts
  • 2 tbsp olive oil for grilling

MARINADE

  • ½ cup olive oil
  • â…“ cup red wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp fresh parsley chopped
  • 1 tbsp onion powder
  • 3 cloves garlic crushed
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp Italian herbs
  • ¼ tsp chili flakes
  • 1 tbsp sugar
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Combine all marinade ingredients in a large bowl or freezer bag.
    1/2 cup olive oil, 1/3 cup red wine vinegar, 2 tbsp lemon juice, 1 tbsp lemon zest, 2 tbsp fresh parsley, 1 tbsp onion powder, 3 cloves garlic, 1 tsp dried basil, 1/2 tsp dried oregano, 1/2 tsp Italian herbs, 1/4 tsp chili flakes, 1 tbsp sugar, 1/4 tsp salt, 1/4 tsp pepper
  • Pierce chicken breasts with a fork a few times, and place it into the marinade.

  • Marinate for 30 minutes or up to 4 hours before cooking.
  • Preheat grill to medium-high heat. Or place a cast-iron grill pan over medium-high heat. Brush it well with olive oil.

  • Grill chicken on each side 7-8 minutes or until no longer pink in the center and chicken reaches 70°C.
  • Rest for 5 minutes before slicing.
