Caprese Stuffed Avocado

Who doesn’t love avocado? They’re creamy, they’re green, they’re… healthy? Caprese stuffed avocados take all the best parts of an avocado and stuff them with even more deliciousness in the form of mozzarella, tomatoes, and basil. Plus, it’s a dish that looks as good as it tastes.

Ingredients
  

  • 2 Avocado
  • 2 oz mozzarella balls cut in small pieces
  • cup Cherry tomatoes halved
  • ¼ cup Fresh basil cut into ribbons
  • ½ tsp Salt
  • ½ tsp Pepper
  • 4 tsp Balsamic vinegar

Instructions
 

  • Slice the avocados in half and remove the pits. Scoop half of the flesh out of each avocado half (leave half undisturbed) and transfer to a bowl.

  • Mash the avocado in the bowl. Stir in the tomatoes, fresh mozzarella balls, and fresh basil. Season with salt and pepper.
    2 oz mozzarella balls, 2/3 cup Cherry tomatoes, 1/4 cup Fresh basil, 1/2 tsp Salt, 1/2 tsp Pepper
  • Scoop the mixture back into the avocado halves. Drizzle with balsamic vinegar.
