Cauliflower Faux Mac and Cheese
Ingredients
- 5 cups cauliflower florets
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup coconut milk
- ½ cup vegetable stock
- 2 tbsp coconut flour sifted
- 1 egg beaten
- 2 cups tasty cheese
Instructions
- Pre-heat your oven to 180C
- Season florets with salt and steam until firm5 cups cauliflower
- Place florets in greased oven proof dish
- Heat coconut milk over medium heat in a skillet, season with salt and pepper¼ tsp salt, 1 cup coconut milk, ¼ tsp pepper
- Stir in stock and add coconut flour to the mix, stir½ cup vegetable stock, 2 tbsp coconut flour
- Cook until the sauce begins to bubble
- Remove heat and add beaten egg1 egg
- Pour the thick sauce over cauliflower and mix in cheese2 cups tasty cheese
- Bake for 30-45 minutes
- Serve and enjoy!
