Cauliflower Fried Rice – Clean Eating

This dish is a healthier, delicious alternative to traditional fried rice. It’s the perfect meal for when you’re craving something hearty and satisfying, but don’t want to overdo it on the calories.

Ingredients
  

  • 1 brown onion finely chopped
  • 1 cloves garlic crushed
  • 1 tbsp ginger crushed
  • 1 carrot diced
  • 1 cup frozen peas
  • 2 tbsp sesame oil
  • 4 eggs
  • 454 g cauliflower rice fresh or frozen
  • 1 tbsp honey
  • 3 tbsp soy sauce
  • 3 stems spring onion finely chopped

Instructions
 

  • Preheat a large non-stick pan over medium-high heat and coat with oil.
    2 tbsp sesame oil
  • Toss in the carrots, peas and onion, along with the ginger and garlic and cook for 4-5 minutes, stirring occasionally until the vegetables are soft.

  • Set vegetables to the side.
  • Add eggs and cauliflower rice to pan, stir constantly until eggs are scrambled and rice is warmed through. (do not thaw frozen cauliflower rice).
    4 eggs, 454 g cauliflower rice
  • Remove the cauliflower rice from heat and stir in the honey and soy sauce.
    1 tbsp honey, 3 tbsp soy sauce
  • Add the vegetables.
  • Serve garnished with green onion or coriander if preferred.
