Cauliflower Fried Rice – Clean Eating
Ingredients
- 1 brown onion finely chopped
- 1 cloves garlic crushed
- 1 tbsp ginger crushed
- 1 carrot diced
- 1 cup frozen peas
- 2 tbsp sesame oil
- 4 eggs
- 454 g cauliflower rice fresh or frozen
- 1 tbsp honey
- 3 tbsp soy sauce
- 3 stems spring onion finely chopped
Instructions
- Preheat a large non-stick pan over medium-high heat and coat with oil.2 tbsp sesame oil
- Toss in the carrots, peas and onion, along with the ginger and garlic and cook for 4-5 minutes, stirring occasionally until the vegetables are soft.1 brown onion, 1 cloves garlic, 1 carrot, 1 cup frozen peas, 1 tbsp ginger
- Set vegetables to the side.
- Add eggs and cauliflower rice to pan, stir constantly until eggs are scrambled and rice is warmed through. (do not thaw frozen cauliflower rice).4 eggs, 454 g cauliflower rice
- Remove the cauliflower rice from heat and stir in the honey and soy sauce.1 tbsp honey, 3 tbsp soy sauce
- Add the vegetables.
- Serve garnished with green onion or coriander if preferred.3 stems spring onion
