Cheesy Prosciutto Egg Cups
Ingredients
- 12 slices prosciutto
- 1 teaspoon fresh rosemary finely chopped
- 2 tablespoons spring onions chopped
- ½ cup tasty cheese grated
- 1 cup Grana Padano grated
- 6 eggs
- 1 cup heavy cream
Garnish
- 2 tablespoons sour cream
- 1 tbsp spring onion
Instructions
- Preheat the oven to 180C
- Lightly grease a cupcake tin with butter or oil.
- In a bowl, mix the eggs and cream together. Stir in the cheeses, reserving a little Grana Padano to sprinkle on top of each cup.1/2 cup tasty cheese, 6 eggs, 1 cup heavy cream, 1 cup Grana Padano grated
- Stir in rosemary and spring onions.1 teaspoon fresh rosemary, 2 tablespoons spring onions
- Carefully take your prosciutto strips and line each segment of the cupcake tin to form a cup.12 slices prosciutto
- Fill each cup up to a maximum of 2/3rd full with the egg mixture.
- Sprinkle remaining Grana Padano on top and place into the oven for 15 minutes or until golden.
- Leave to cool for 5 minutes before removing from the tin, enjoy!
- Top with sour cream and green onions.2 tablespoons sour cream
