Cheesy Prosciutto Egg Cups

Prosciutto Cups are a great appetizer or snack made with delicious prosciutto, cheddar cheese, Grana Padano, eggs, and cream.

Ingredients
  

  • 12 slices prosciutto
  • 1 teaspoon fresh rosemary finely chopped
  • 2 tablespoons spring onions chopped
  • ½ cup tasty cheese grated
  • 1 cup Grana Padano grated
  • 6 eggs
  • 1 cup heavy cream

Garnish

  • 2 tablespoons sour cream
  • 1 tbsp spring onion

Instructions
 

  • Preheat the oven to 180C
  • Lightly grease a cupcake tin with butter or oil.
  • In a bowl, mix the eggs and cream together. Stir in the cheeses, reserving a little Grana Padano to sprinkle on top of each cup.
    1/2 cup tasty cheese, 6 eggs, 1 cup heavy cream, 1 cup Grana Padano grated
  • Stir in rosemary and spring onions.

  • Carefully take your prosciutto strips and line each segment of the cupcake tin to form a cup.
    12 slices prosciutto
  • Fill each cup up to a maximum of 2/3rd full with the egg mixture.
  • Sprinkle remaining Grana Padano on top and place into the oven for 15 minutes or until golden.
  • Leave to cool for 5 minutes before removing from the tin, enjoy!
  • Top with sour cream and green onions.
