Ingredients
  

  • ½ cup brown rice rinsed & drained
  • ½ chicken breasts
  • 1 tbsp taco seasoning
  • ½ tbsp ground cumin
  • ½ tbsp garlic powder
  • ½ tsp salt
  • 1 cup water
  • 1 can black beans rinsed and drained
  • 1 cup salsa
  • 1 cup corn frozen or cooked
  • 1 bunch coriander chopped
  • 1 bunch spring onion chopped
  • 60 g cheese grated
  • 2 cups iceberg lettuce thinly shredded
  • 4 tortillas

Instructions
 

PRESSURE COOKER

  • Put the brown rice, black beans, chicken breasts, taco seasoning, cumin, garlic powder, salt, and water in pressure cooker or Instant Pot. There’s no need to stir.
    ½ cup brown rice, ½ chicken breasts, 1 tbsp taco seasoning, ½ tbsp ground cumin, ½ tbsp garlic powder, ½ tsp salt, 1 can black beans, 1 cup water
  • Close the lid and cook for 20 minutes on high pressure.
  • Meanwhile, chop the coriander and onion; shred the lettuce and grate the cheese.

  • After the pressure cooker has finished cooking, gently release the pressure. It’s fine if the beans appear a little dry on top. As you stir, they will absorb more liquid.
  • In the pressure cooker, shred the chicken with two forks.
  • Then stir in the salsa, corn, coriander, and spring onion. Stir.

  • Your chicken and rice burrito filling is complete – fill your tortillas and enjoy!

STOVETOP

  • Brown rice, chicken breasts, taco seasoning, cumin, garlic powder, salt, and broth or water in a large pot (everything but black beans).
    ½ chicken breasts, 1 tbsp taco seasoning, ½ tbsp ground cumin, ½ tbsp garlic powder, ½ tsp salt, 1 cup water, 1 can black beans
  • Bring to a boil, then reduce to a low heat and cook for 45 minutes, or until the water is absorbed.
  • In the pot, shred the chicken. Combine canned black beans, salsa, corn, coriander, and spring onion in a mixing bowl. Stir.

  • Your chicken and rice burrito filling is complete – fill your tortillas and enjoy!
