Chicken Stew – Clean Eating
Ingredients
- 1 brown onion finely chopped
- 2 cloves garlic crushed
- 2 carrots diced
- 2 stalks celery diced
- 450 g chicken breast
- 220 g potatoes cubed
- 1 tbsp olive oil
- ½ tbsp dried rosemary
- ½ tsp dried oregano
- ¼ tsp dried thyme
- ¼ tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp chili flakes
- 2 bay leaves
- 480 ml chicken stock
- ½ tbsp fresh parsley
- ½ tbsp fresh dill
Instructions
- Preheat a large pot over medium heat and coat with oil.1 tbsp olive oil
- Mix in the onion, garlic, carrots, and celery. Cook, stirring occasionally, for 5 minutes.1 brown onion, 2 cloves garlic, 2 carrots, 2 stalks celery
- Combine the chicken, rosemary, oregano, thyme, cumin, salt, pepper, and chili flakes in a mixing bowl.450 g chicken breast, ½ tbsp dried rosemary, ½ tsp dried oregano, ¼ tsp dried thyme, ¼ tsp ground cumin, ¼ tsp salt, ¼ tsp pepper, 1/4 tsp chili flakes
- Cook for 2 minutes, stirring once during that time.
- Stir in the chicken stock, potatoes, and bay leaves.220 g potatoes, 480 ml chicken stock, 2 bay leaves
- Cover, bring to a boil, then reduce to a low heat and cook for 20 minutes, or until potatoes are fork tender.
- Turn off the heat, stir in the parsley and dill, and serve hot.1/2 tbsp fresh parsley, 1/2 tbsp fresh dill
