Ingredients
  

  • 1 brown onion finely chopped
  • 2 cloves garlic crushed
  • 2 carrots diced
  • 2 stalks celery diced
  • 450 g chicken breast
  • 220 g potatoes cubed
  • 1 tbsp olive oil
  • ½ tbsp dried rosemary
  • ½ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp chili flakes
  • 2 bay leaves
  • 480 ml chicken stock
  • ½ tbsp fresh parsley
  • ½ tbsp fresh dill

Instructions
 

  • Preheat a large pot over medium heat and coat with oil.

  • Mix in the onion, garlic, carrots, and celery. Cook, stirring occasionally, for 5 minutes.

  • Combine the chicken, rosemary, oregano, thyme, cumin, salt, pepper, and chili flakes in a mixing bowl.

  • Cook for 2 minutes, stirring once during that time.
  • Stir in the chicken stock, potatoes, and bay leaves.
    220 g potatoes, 480 ml chicken stock, 2 bay leaves
  • Cover, bring to a boil, then reduce to a low heat and cook for 20 minutes, or until potatoes are fork tender.
  • Turn off the heat, stir in the parsley and dill, and serve hot.
