Ingredients
  

  • 1 tbsp olive oil
  • 450 g chicken breast cut into 2.5cm pieces
  • 1 brown onion thinly sliced
  • 1 carrot sliced
  • 1 yellow capsicum thinly sliced
  • 220 g broccoli chopped
  • 3 cloves garlic crushed
  • 1 tbsp fresh ginger peeled and crushed
  • 1 cup chicken stock
  • ¼ cup soy sauce
  • 1 tbsp honey or sub maple syrup
  • 1 tbsp rice vinegar
  • 3 tbsp cornstarch

Garnish

  • ½ tbsp sesame seeds
  • 1 tbsp fresh parsley

Instructions
 

  • Prep all of your vegetables and chicken
  • Whisk together the chicken stock, soy sauce, honey, vinegar, cornstarch, garlic, and ginger in a medium mixing bowl. Place aside.

  • Preheat a large ceramic non-stick pan over medium heat with 1/2 of the oil

  • Cook the chicken for 3 minutes per side, stirring occasionally.
    450 g chicken breast
  • Put the chicken aside an increase heat to high.
  • Add more oil, onion, carrot, and capsicum and cook for 2 minutes (or until veges are to your liking), stirring once or twice during that time.

  • Put aside.
  • Switch back to medium heat, add broccoli and whisk stir fry sauce (whisk well, cornstarch settles quickly at the bottom) before adding to the pan.
    220 g broccoli
  • Allow sauce to come to a boil, then cook for a few minutes, stirring frequently, until thickened.
  • Return the chicken and veges to the pan.
  • Stir gently and cook for a few minutes.
  • Sprinkle with sesame seeds and parsley to serve.
