Low Carb Chili Lime Meatballs
Ingredients
Meatballs
- 450 g minced chicken
- 2 tbsp flaxseed meal
- 2 tbsp almond flour
- 2 spring onions chopped
- ½ red capsicums
- 2 tbsp coriander chopped
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp chili flakes
- ½ lime juice and zest
- 60 g cheddar cheese
Guacamole
- 1 avocado
- ½ lime juice
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 180°C. grate Cheddar Cheese and set aside in a bowl. Prep all of the vegetables and add to bowl with ground chicken.450 g minced chicken, 2 spring onions, ½ red capsicums, 60 g cheddar cheese
- Chop coriander and add to the bowl. Season with spices, then juice lime into the chicken meatball mixture and add the zest.2 tbsp coriander, ½ tsp garlic powder, ½ tsp salt, ½ tsp chili flakes, ½ lime
- Add almond flour and flaxseed meal, then mix everything together well.2 tbsp almond flour, 2 tbsp flaxseed meal
- Roll out the meatballs as uniform as you can get them and bake for 15-18 minutes or until cooked through.
- Make the simple guacamole by mashing together avocado, lime juice, garlic powder, and salt and pepper to taste.1 avocado, ½ lime, ¼ tsp garlic powder, ¼ tsp salt, ¼ tsp pepper
- Serve with simple guac for a delicious meal.
