Creamy Avocado Egg Salad
Ingredients
SALAD
- 2 avocados peeled, deseeded and chopped
- ¼ cup mayonnaise use yogurt for a healthier version
- ¼ cup Greek yogurt
- 1 tbsp lemon juice
- 8 eggs hard-boiled, peeled and chopped
- ½ cup celery finely chopped
- ½ red onion chopped
- 1 tsp mustard powder
- 1 tbsp fresh dill chopped
- ½ sprig spring onion chopped
- ¼ tsp salt
- ¼ tsp pepper
- ½ tsp paprika sweet or smoked
GARNISH
- ½ sprig spring onion chopped
- 1 tbsp chives
- ½ tsp paprika
Instructions
- In a medium bowl, mash the avocado, with lemon juice together leaving some medium/small chunks.2 avocados, 1 tbsp lemon juice
- Add mayo and Greek yogurt, stir to combine, add salt and pepper to taste. Set aside.1/4 cup Greek yogurt, 1/4 tsp salt, 1/4 tsp pepper, 1/4 cup mayonnaise
- Boil and peel the eggs and chop them into 1/4 inch pieces. Add them to a large bowl.8 eggs
- Add the rest of the ingredients to the eggs, including the avocado mixture and stir to combine.1/2 cup celery, 1/2 red onion, 1 tsp mustard powder, 1 tbsp fresh dill, 1/2 sprig spring onion, 1/2 tsp paprika
- Taste and adjust for salt and pepper.
- Refrigerate for 30 minutes before serving.
- Garnish with chopped chives, green onion and paprika before serving.1 tbsp chives, 1/2 tsp paprika, 1/2 sprig spring onion
