Creamy Lemon Parmesan Chicken
Ingredients
- 4 chicken breasts
- ½ tbsp salt
- ½ tsp pepper
- 2 tbsp olive oil
- 4 cloves garlic crushed
- 1 cup heavy cream
- ½ cup chicken stock
- 1 tsp Italian seasoning optional
- ½ cup parmesan cheese grated
- 1 tbsp lemon juice to taste
Instructions
- Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.4 chicken breasts, 1/2 tbsp salt, 1/2 tsp pepper
- Heat olive oil in a large cast iron pan over medium-high heat. Add the chicken and sear for 4-8 minutes per side, without moving, until browned and almost done (internal temperature should reach 70C). Remove to a plate and cover with foil to keep warm.2 tbsp olive oil
- Reduce heat to medium. Add the garlic to the pan. Saute for about 1 minute, until fragrant.4 cloves garlic
- Add the chicken stock, cream, and Italian seasoning, if using. Simmer for 2 minutes.1 cup heavy cream, 1/2 cup chicken stock, 1 tsp Italian seasoning
- Reduce heat to low. Stir in the grated parmesan cheese, until it melts into a smooth sauce.1/2 cup parmesan cheese
- Stir in the lemon juice, and adjust amount to taste if desired.1 tbsp lemon juice
- Return the chicken to the pan. Simmer the chicken in sauce for 1-2 minutes, until hot and completely cooked through (internal temperature reaches 70-75C).
