Ingredients
  

  • 8 tomatoes sliced into wedges, we use a mix of red and yellow
  • 1 red onion thinly sliced
  • 2 cloves garlic crushed
  • ½ cup sour cream
  • ½ cup plain greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill chopped
  • ¼ cup spring onions chopped
  • ½ tsp salt
  • ¼ tsp pepper

GARNISH

  • 1 tsp fresh dill
  • 2 tbsp spring onions

Instructions
 

  • In a small bowl, combine sour cream, spring onion, greek yogurt, lemon juice, crushed garlic, and dill. Add salt and pepper to taste. Stir and set aside.

  • Slice tomatoes into wedges. Place in a large mixing bowl. Add thinly sliced red onion. Just before serving stir sauce into the salad and mix to coat.

  • Garnish with dill and spring onions.

  • After adding the sauce, the salad will stay fresh for about 5-6 hours if refrigerated.
