Easy Healthy Cauliflower Nachos Recipe with Minced Beef Taco Meat
Ingredients
Cauliflower
- 1 cauliflower
- ¼ cup olive oil
- 1 tsp taco seasoning
Beef
- 500 g minced beef
- 1 cup tasty cheese grated
- 30 g taco seasoning
- ½ cup water
Toppings
- ¾ cup tomatoes diced
- â…“ cup red onion sliced
- ½ avocado diced
- 2 tbsp coriander chopped
Instructions
- Preheat the oven to 220C. Grease a baking sheet well.
- Cut the cauliflower into florets, then slice the florets thinly to make “chips”.1 cauliflower
- Toss the cauliflower chips with the avocado oil and taco seasoning.1/4 cup olive oil, 1 tsp taco seasoning
- Arrange the cauliflower chips in a single layer on the baking sheet. Roast in the oven for about 20 minutes, until browned and crispy on the edges.
- Meanwhile, brown the mince in a skillet over medium-high heat for about 10-12 minutes, until meat is cooked through, add taco seasoning with water. Break part to crumble as you cook.500 g minced beef, 30 g taco seasoning, 1/2 cup water
- When the cauliflower is done, flip the pieces over. Crumble the mince over the nachos. Top with red onion and tomatoes, then shredded cheese last.1 cup tasty cheese, 3/4 cup tomatoes, 1/3 cup red onion
- Return to the oven for about 5 minutes, until the cheese melts. Garnish with avocado and fresh coriander.1/2 avocado, 2 tbsp coriander
