Easy Mini Eggplant Pizza Recipe – Low Carb
Ingredients
- 1 Eggplant cut into 1-1.5cm slices
- 2 tbsp Olive oil
- ½ tsp Salt
- ½ tsp Pepper
- ½ cup Marinara
- 1 ½ cup Mozzarella grated
- 1 tsp Italian seasoning
- 30 g pepperoni
Instructions
- Preheat the oven to 230C. Line a baking tray with baking paper.
- Arrange the eggplant slices in a single layer on the lined baking tray. Brush or spray both sides lightly with olive oil. Sprinkle with salt and pepper.1 Eggplant, 2 tbsp Olive oil, 1/2 tsp Salt, 1/2 tsp Pepper
- Bake for about 15 minutes, until the eggplant is soft and golden.
- Spread about marinara sauce on each eggplant slice. Sprinkle each with grated cheese. Top with Italian seasoning and pepperoni slices.1/2 cup Marinara, 1 1/2 cup Mozzarella, 1 tsp Italian seasoning, 30 g pepperoni
- Set the oven to grill or 260C. Return to the oven. Bake for about 5 more minutes, until the cheese is melted and slightly browned. Serve with salad or steamed veges for a complete meal.
