Easy Mini Eggplant Pizza Recipe – Low Carb

Ingredients
  

  • 1 Eggplant cut into 1-1.5cm slices
  • 2 tbsp Olive oil
  • ½ tsp Salt
  • ½ tsp Pepper
  • ½ cup Marinara
  • 1 ½ cup Mozzarella grated
  • 1 tsp Italian seasoning
  • 30 g pepperoni

Instructions
 

  • Preheat the oven to 230C. Line a baking tray with baking paper.
  • Arrange the eggplant slices in a single layer on the lined baking tray. Brush or spray both sides lightly with olive oil. Sprinkle with salt and pepper.
    1 Eggplant, 2 tbsp Olive oil, 1/2 tsp Salt, 1/2 tsp Pepper
  • Bake for about 15 minutes, until the eggplant is soft and golden.
  • Spread about marinara sauce on each eggplant slice. Sprinkle each with grated cheese. Top with Italian seasoning and pepperoni slices.
    1/2 cup Marinara, 1 1/2 cup Mozzarella, 1 tsp Italian seasoning, 30 g pepperoni
  • Set the oven to grill or 260C. Return to the oven. Bake for about 5 more minutes, until the cheese is melted and slightly browned. Serve with salad or steamed veges for a complete meal.
