Who knew that eggplant could be so delicious? Our eggplant fries are crispy on the outside and tender on the inside. They’re perfect for dipping in your favorite sauce, or enjoying on their own.

Ingredients
  

  • 2 eggs
  • 2 cups almond flour
  • 2 tbsps coconut oil spray
  • 2 eggplants peeled and cut thinly
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Preheat your oven to 200C.
  • Take a bowl and mix flower with salt and black pepper in it.
    ¼ tsp salt, ¼ tsp pepper, 2 cups almond flour
  • Take another bowl and beat eggs until frothy.

  • Dip the eggplant pieces into eggs.
    2 eggplants
  • Then coat them with a flour mixture.
  • Add another layer of flour and egg.
  • Then, take a baking sheet and grease with coconut oil on top.
    2 tbsps coconut oil
  • Bake for about 15 minutes.
  • Serve and enjoy!
