Fruity Nutty Bliss Balls – Clean Eating
Ingredients
Coating
- ½ cup roasted pistachios finely chopped
- ¾ cup sliced almonds
Balls
- ¾ cup sliced almonds
- ¼ tsp almond extract
- 1 tbsp honey
- ¼ cup dried apricots finely chopped
- ¼ cup dried cranberries finely chopped
Instructions
- In a food processor, pulse pistachios until fine.1/2 cup roasted pistachios
- Place pistachios in a shallow bowl and set aside for coating.
- In a food processor, pulse the almonds for the balls until finely chopped. Pour in the extract.3/4 cup sliced almonds, ¼ tsp almond extract
- Add honey gradually while processing.1 tbsp honey
- Transfer to a large mixing bowl and stir in the apricots and cranberries.¼ cup dried apricots, 1/4 cup dried cranberries
- Divide the mixture into 6 equal parts and roll each into a 1.5cm thick roll.
- Wrap in glad wrap and place in the refrigerator for 1hour or until firm.
- Unwrap the rolls and cut them into 3-4cm pieces.
- Roll half of the pieces in the coating almonds, gently pressing to adhere. Roll the other half in the pistachios you put aside earlier.3/4 cup sliced almonds
- Store in airtight containers with baking paper between each layer.
