Hearty Seafood Chowder

This rich and creamy seafood chowder recipe is a healthy comfort food meal. Make it with clams or with white fish. Either way, it’s an dinner recipe that takes less than 40 minutes, start to finish.

Ingredients
  

  • 4 slices bacon chopped
  • ¼ brown onion chopped
  • 2 turnip cut into cubes
  • 2 ½ cups chicken stock
  • ½ tsp dried thyme
  • ¾ tsp salt
  • ½ tsp pepper
  • 1 ½ cups heavy cream
  • 450 g white fish cut into 1 inch pieces
  • 2 tbsp butter

Instructions
 

  • In large saucepan over medium heat, cook the bacon until crisp. Remove with a slotted spoon, and drain on paper-towel lined plate.

  • Add the onion and turnips to the bacon grease and cook until the onions are tender, about 5 minutes. Add the chicken stock and simmer until the turnip is tender, 10 to 15 minutes. Season with thyme, salt and pepper.

  • Add the fish and continue to simmer until the fish is cooked through, about 4 minutes. Stir in the heavy cream and the butter.

  • Sprinkle each serving with the cooked bacon.
