Low-Carb Chicken Curry
Ingredients
- 2 tbsp coconut oil
- 1 fresh ginger around 4cm
- 1 green chili
- 2 shallots
- 2 cloves garlic
- 2 tsp ground turmeric
- 1 stalk lemongrass stalk
- ½ cup coconut milk
- ½ cup water
- 600 g chicken
- ½ tsp. salt
- 1 tbsp coriander chopped
Instructions
- Bruise Lemongrass by hitting it.1 stalk lemongrass stalk
- Pound Ginger, Green Chili, Shallots and Garlic with a pestle and mortar (or blend them).1 fresh ginger, 1 green chili, 2 shallots, 2 cloves garlic
- Saute the pounded ingredients in Coconut Oil on medium heat.2 tbsp coconut oil
- After 3-4 minutes, add Turmeric Powder and the bruised Lemongrass, and saute once more.2 tsp ground turmeric
- Add Chicken and mix well.600 g chicken
- Pour Coconut Milk and Water and mix well once more. Add Salt and simmer while covered for about 20 minutes or until sauce thickens and chicken is cooked through.1/2 cup coconut milk, 1/2 cup water, 1/2 tsp. salt
- Sprinkle coriander and serve!1 tbsp coriander
