Low-Carb Chicken Curry

Probably one of the easiest Malaysian curries, Ayam Masak Lemak has been turned low-carb! It’s missing a few high-carb ingredients from the original style, but this speaks for itself in terms of flavor.

Ingredients
  

  • 2 tbsp coconut oil
  • 1 fresh ginger around 4cm
  • 1 green chili
  • 2 shallots
  • 2 cloves garlic
  • 2 tsp ground turmeric
  • 1 stalk lemongrass stalk
  • ½ cup coconut milk
  • ½ cup water
  • 600 g chicken
  • ½ tsp. salt
  • 1 tbsp coriander chopped

Instructions
 

  • Bruise Lemongrass by hitting it.

  • Pound Ginger, Green Chili, Shallots and Garlic with a pestle and mortar (or blend them).
    1 fresh ginger, 1 green chili, 2 shallots, 2 cloves garlic
  • Saute the pounded ingredients in Coconut Oil on medium heat.
    2 tbsp coconut oil
  • After 3-4 minutes, add Turmeric Powder and the bruised Lemongrass, and saute once more.
    2 tsp ground turmeric
  • Add Chicken and mix well.
    600 g chicken
  • Pour Coconut Milk and Water and mix well once more. Add Salt and simmer while covered for about 20 minutes or until sauce thickens and chicken is cooked through.
    1/2 cup coconut milk, 1/2 cup water, 1/2 tsp. salt
  • Sprinkle coriander and serve!
    1 tbsp coriander
