



Keto Pancakes – Low Carb
Ingredients
- 4 eggs room temperature
- 120 g cream cheese softened to room temperature
- 6 tablespoons coconut flour
- 4 tablespoons milk
- 2 tablespoons Erythritol sub 1 1/2 tbsp sugar if not keto/low carb
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- 1 teaspoon lemon zest optional
- 1 scoop protein powder optional
Cooking
- 2 tablespoons butter
Instructions
- Add all the ingredients to a blender and mix until fully combined and smooth. - Heat up a griddle or place a non stick pan over high heat. Spray with non-stick oil or melt a 2 tablespoons of butter.2 tablespoons butter
- Use an ice-cream scoop to spoon the batter into same size pancakes and add to the pan. Cook in batches, 2 minutes per side, or until golden brown.
- Stack and top how you like. We prefer butter, sugar-free syrup and berries.
