Ingredients
  

  • 4 eggs room temperature
  • 120 g cream cheese softened to room temperature
  • 6 tablespoons coconut flour
  • 4 tablespoons milk
  • 2 tablespoons Erythritol sub 1 1/2 tbsp sugar if not keto/low carb
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon lemon zest optional
  • 1 scoop protein powder optional

Cooking

  • 2 tablespoons butter

Instructions
 

  • Add all the ingredients to a blender and mix until fully combined and smooth. Scrape the sides of the blender with a spatula and repeat.
    4 eggs, 120 g cream cheese, 6 tablespoons coconut flour, 4 tablespoons milk, 2 tablespoons Erythritol, 1 teaspoon baking powder, 1 teaspoon pure vanilla extract, 1 teaspoon lemon zest, 1 scoop protein powder
  • Heat up a griddle or place a non stick pan over high heat. Spray with non-stick oil or melt a 2 tablespoons of butter.
    2 tablespoons butter
  • Use an ice-cream scoop to spoon the batter into same size pancakes and add to the pan. Cook in batches, 2 minutes per side, or until golden brown.
  • Stack and top how you like. We prefer butter, sugar-free syrup and berries.
