Majestic Beef And Tomato Squash
Ingredients
- 1 kg acorn squash pricked with fork
- ¼ tsp salt
- ¼ tsp pepper
- 3 cloves garlic peeled and crushed
- 1 brown onion peeled and chopped
- 1 portobello mushroom sliced
- 800 g canned tomatoes diced
- 1 tsp dried oregano
- ¼ tsp cayenne pepper
- ½ tsp dried thyme
- 450 g minced beef
- 1 green capsicum seeded and chopped
Instructions
- Pre-heat your oven to 200C
- Take acorn squash and transfer to lined baking sheet, bake for 40 minutes1 kg acorn squash
- Cut in half and let it cool
- Deseed them
- Take a pan and place it over medium-high heat, add meat, garlic, onion and mushroom, stir cook until brown3 cloves garlic, 1 brown onion, 1 portobello mushroom, 450 g minced beef
- Add salt, pepper, thyme, oregano, cayenne, tomatoes, green capsicum and stir¼ tsp salt, ¼ tsp pepper, 800 g canned tomatoes, 1 tsp dried oregano, ¼ tsp cayenne pepper, ½ tsp dried thyme, 1 green capsicum
- Cook for 10 minutes
- Stuff squash halves with beef mix
- Transfer to oven and bake for 10 minutes more
- Serve and enjoy!
