Ingredients
  

Salad

  • 2 ½ cups shredded chicken
  • â…“ cup feta crumbled
  • â…“ cup olives sliced
  • ½ cup red capsicum diced
  • ¼ cup red onion diced
  • ¼ cup fresh basil cut into ribbons

Dressing

  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tbsp dijon mustard
  • ½ tsp Italian seasoning optional
  • â…› tsp pepper
  • â…› tsp salt

Instructions
 

  • In a large bowl, add the shredded chicken, feta cheese, black olives, capsicum, red onion, and fresh basil. Mix until combined.

  • In a small bowl, whisk together the mayonnaise, lemon juice, olive oil, Dijon mustard, Italian seasoning, pepper, and salt, until smooth.
