Ingredients
  

Herb Butter

  • 2 tbsp butter softened, divided
  • ½ tbsp fresh rosemary
  • ½ tbsp fresh thyme
  • 1 cloves garlic crushed

Steak

  • 4 filet mignon steaks at room temperature
  • ½ tsp salt
  • ½ tsp pepper

Instructions
 

  • Remove your filet mignon from the fridge about 30 minutes before cooking to bring it to room temperature.

  • Prep the herb butter by mixing all the ingredients together into a log and put to the side.
    2 tbsp butter, 1/2 tbsp fresh rosemary, 1/2 tbsp fresh thyme, 1 cloves garlic
  • Trim any connective tissue around the edges of the steaks.
  • Season the filets liberally with salt and pepper on both sides.

  • Heat the cast iron pan over medium-high heat, until the pan is very hot.
  • Add the filets. Sear for 2 minutes on each side, without moving them around. For a 5cm thick steak, that is 5 minutes for rare, 6 minutes for medium rare, 7 minutes for medium, or 8 minutes for medium well.
    Use a meat thermometer to check for the right temperature : 52C for rare, 54C for medium rare, 60C for medium, and 68C for medium well.
    The temperature will rise slightly while resting.
  • Remove the filets from the pan and transfer to a plate. Top each with herb butter (slice the log of herb butter into four parts and put one on each steak
