Ingredients
  

MAKE HOME MADE VERSION IF PREFERRED

  • 1 pizza base Deep dish
  • ¾ cup pizza sauce

MIXED VEGES – 1 CUP

  • cup cherry tomato
  • cup eggplant
  • cup onions
  • cup green capsicum
  • cup mushrooms

Other

  • ½ tsp olive oil
  • 1 cloves garlic
  • 1 cup mozzarella
  • tsp dried basil
  • tsp oregano
  • tsp fresh thyme
  • tsp fresh chili

OPTIONAL TOPPINGS

  • 20 g parmesan cheese Grated
  • 6 leaves fresh basil

Instructions
 

  • Prepare pizza dough (half batch only) and sauce if using homemade.
    1 pizza base, ¾ cup pizza sauce
  • If roasting veggies, preheat oven to 230°, toss veggies in olive oil on a baking sheet, and roast for 4-6 minutes on the top rack (low/medium grill), tossing once for even cooking. Remove from oven and set aside.
    ⅙ cup cherry tomato, ⅙ cup eggplant, ⅙ cup onions, ⅙ cup green capsicum, ⅙ cup mushrooms, ½ tsp olive oil
  • Coat a 10-inch cast iron pan or round baking dish with olive oil and run a garlic clove around for seasoning.
    Place base into the pan, if you are using your own dough – plop your dough down into the pan and push it up around the sides about 2.5 to 4 cm

  • Sprinkle in 1/2 of mozzarella cheese, then add veggies, then sauce. Top with remaining mozzarella cheese, Italian seasonings (dried basil, oregano, thyme, chili, etc.) and grated parmesan cheese.
    1 cup mozzarella, ⅛ tsp dried basil, ⅛ tsp oregano, ⅛ tsp fresh thyme, ⅛ tsp fresh chili, 20 g parmesan cheese
  • Bake for 25-30 minutes or until the crust is golden brown and the cheese and sauce are bubbly. Let rest for 5-10 minutes before cutting, top with fresh basil then serve immediately. Store cooled leftovers covered in the refrigerator up to 2-3 days. Or in the freezer up to 1 month.

Notes

*To make your own pizza sauce, add 1 cup (245 g) tomato sauce to a small saucepan over medium heat. Season with 1 tsp each dried oregano, dried basil, dried garlic, sweetener of choice, and a healthy pinch each salt and pepper. Whisk to combine, taste, and adjust seasonings as needed. Serve warm.
