Simple Lamb Riblets And Mini Pesto
Ingredients
- 1 cup fresh parsley
- 1 cup fresh mint
- 1½ brown onions peeled and chopped
- â…“ cup pistachios
- 1 tsp lemon zest
- 5 tbsp avocado oil
- ¼ tsp salt
- 900 g lamb riblets
- 5 cloves garlic peeled and crushed
- 1 orange juice
Instructions
- Add parsley, mint, 1 onion, pistachios, lemon zest, salt, and avocado oil to Food processor1 cup fresh parsley, 1 cup fresh mint, 1½ brown onions, 1/3 cup pistachios, 1 tsp lemon, 5 tbsp avocado oil, 1/4 tsp salt
- Rub lamb with mix900 g lamb riblets
- Transfer to bowl and let it refrigerate for 1 hour
- Transfer lamb to baking dish
- Add garlic and 1/2 onion, drizzle orange juice5 cloves garlic, 1 orange, 1½ brown onions
- Bake for 2 hours at 120C
- Divide between plates and serve
