Slow Cooker White Chicken Chili

- 1 slow cooker
Ingredients
- 700 g boneless skinless chicken thighs
- 3 cups chicken stock
- 350 g cauliflower florets
- ¼ cup coconut oil or bacon grease
- ¼ cup brown onion chopped
- 1 jalapeno pepper chopped (leave seeds in for extra heat)
- 2 cloves garlic crushed
- 2 tsp ground cumin
- 1 tsp salt
- ½ tsp pepper
- 1 tbsp coriander
Instructions
- Place all of the ingredients except the coriander in a large slow cooker. Cook on high for 4 hours, or low for 8 hours.700 g boneless skinless chicken thighs, 3 cups chicken stock, 350 g cauliflower, 1/4 cup coconut oil, 1/4 cup brown onion, 1 jalapeno pepper, 2 cloves garlic, 2 tsp ground cumin, 1 tsp salt, 1/2 tsp pepper
- Remove the chicken to a plate and shred with two forks. Use an immersion blender to blend the soup until it is mostly creamy. Return the chicken to the pot and mix well.
- Sprinkle with chopped coriander when serving.1 tbsp coriander
