Soulvaki Beef
Ingredients
BEER MARINADE
- 450 g sirloin beef cut in 1-inch cubes
- 1 tbsp dijon mustard
- 1 lemon zest and juice used separately
- ½ tbsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 cloves garlic crushed
- 3 tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
SKEWERS
- 1 green capsicum cut in 1-inch cubes
- 1 red capsicum cut in 1-inch cubes
- 1 brown onion cut in 1-inch cubes or petals
- 1 tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- To a large bowl, add the meat and marinade ingredients. Toss to coat. Cover bowl with a lid, plastic wrap and leave in the fridge for 1 hour or overnight for best results.450 g sirloin beef, 1 tbsp dijon mustard, 1 lemon, ½ tbsp paprika, 1 tsp dried oregano, 1 tsp dried thyme, 1 cloves garlic, 3 tbsp olive oil, 1/4 tsp pepper, 1/4 tsp salt
- Before cooking. Place the cubed veggies in a medium bowl with 1 tablespoon of olive oil, salt and pepper to taste.1 green capsicum, 1 red capsicum, 1 brown onion, 1 tbsp olive oil, 1/4 tsp salt, 1/4 tsp pepper
- If using wooden skewers, dump them in water to avoid burning during cooking time. Cut the tips to fit your skillet.
- Thread the beef along with the veggies between each piece of meat.
- Brush the skewers with the remaining marinade.
- Bring a large grill pan over medium heat, add 1 tablespoon olive oil, cook the skewers for 8 minutes, 2 minutes on each side. Drizzle more olive oil along the process to avoid burning.
- Transfer to a serving platter and cover with foil for 5 minutes before serving.
