Ingredients
  

  • 1 tsp olive oil
  • 1½ cups baby spinach
  • 3 eggs lightly beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 slice whole-grain bread toasted
  • 1 tbsp pumpkin seeds

Instructions
 

  • In a small non-stick skillet over medium-high heat, heat the oil.
    1 tsp olive oil
  • Add spinach and cook, stirring frequently, until the spinach is wilted, 1 to 2 minutes.
    1½ cups baby spinach
  • Place the spinach on a plate.
  • Wipe out the pan, place it over medium heat, and add the eggs. Cook, stirring once or twice to ensure even cooking, for 1 to 2 minutes, or until just set.

  • Add the spinach, salt, and pepper to taste.
    1/4 tsp salt, 1/4 tsp pepper
  • Serve the scramble with toast and pumpkin seeds on the side.
